Gone Veggin'

With my vacation coming only 18 days away and me being slightly away from my goal bikini look/weight, I have decided to try something new. This week, I will be a vegetarian. I have a co worker who is a vegetarian, and I am following his lunch orders for the week. My company actually is set up on a website that allows us to order from any of about 150 restaurants, then the food gets delivered straight to the office and is charged to the company account. In short, I get free lunch.

In order to prepare for this adventure, I grilled t-bones for dinner last night. When the munchies hit a few hours later, I ran out and got a philly cheese steak. How's that for a goodbye tour? lol. Since I am only doing this for a week and rarely eat red meat, I was expecting it to be easy. I signed on to the lunch website to browse for choices (my vegetarian co worker is stuck in a meeting and I am too hungry to wait for him to order today) and all I want is meat. chicken, sausage, flank steak. For some reason every lunch special at every restaurant I normally order from is some delicious meal with meat. God damn it!! I am now really wishing I could order the pasta with the broccoli rabe and sausage :-( But my bikini will thank me for the salad I'm having. Stupid bikini.

Next week, I am bringing back the meat and going carb free. I hear that's what body builders do before a contest or photo shoot. No carbs for a few days. I am not anything resembling a body builder so it may prove to be pointless, but I can try. Seeing as I'm a carboholic, I think it may be a tough week.

Until then, any healthy creative vegetarian meal suggestions?

No veggie advice here, but I've been on a weight loss program for over a year. I lost 50 lb and now am in maintenance mode. But the big thing this program pushes is LOW SODIUM (meaning basically no sodium).

Their theory is the body can't lose weight if its holding water, which is what sodium does. So I say cut back on the salt and/or read food labels. Anything with greater than 150g sodium per serving is very bad.

I did the low/no carb thing about 4-5 years ago... I lost about 10 lbs... but I just like carbs too much.

this is one of my favorites! I just made it this weekend and I double it so i can shack for a few days:

Couscous Salad with Dried Cherries

2/3 cup water
1/2 cup couscous, uncooked
1/3 cup dried cherries (tart or sour cherries), coarsely chopped
1/3 cup coarsely chopped carrots
1/3 cup chopped cucumber
2 green onions, sliced
2 tablespoons balsamic vinegar or raspberry vinegar*
1 tablespoon extra-virgin olive oil
1 tablespoon Dijon-style mustard
Salt and pepper to taste

* Any flavored vinegar (of your choice) will work.

In a medium-size saucepan, bring water to a boil; stir in couscous. Remove from heat and let stand, covered, for 5 minutes. Uncover, fluff with a fork, and let cool an additional 10 minutes. Stir in dried cherries, carrots, cucumber, and green onions; mix well.

In a small bowl, combine balsamic vinegar, olive oil, and mustard; mix well. Pour over couscous mixture; stir to coat all ingredients. Season with salt and pepper to taste.

Serve chilled or at room temperature.

I know someone who lost 70 pounds just by going veg.

That said, it will never happen in the Sloane household. I'm such a fat ass that I can't deny myself anything.

Good luck. I don't have any recipes per se, but I love hummus and pita. It makes me feel healthy.
